Cheese rotation from Carmel Farms.

A small rotation of fresh local cheeses now coming through the Castle warehouse — three varieties, weekly drops, limited cases.

Castle’s adding a small Hudson Valley cheese rotation. Carmel Farms — same folks who supply our fresh chèvre — pulled together three new varieties we’ll run weekly while supply holds.

The rotation:

  • Aged tomme — semi-firm, grass-fed, eight-week age. Pairs with charcuterie boards and grilled vegetables.
  • Smoked mozzarella — apple-wood smoked, fresh-pulled. Restaurants are using it on flatbreads and antipasto plates.
  • Cultured butter — small batch, slightly tangy. A favorite for finishing pasta and bread service.

Cases are limited and these move fast. Standing accounts get first call — ask your driver or call dispatch by Thursday for the following week’s drop.
